The History of Schmidt's Bakery
Schmidt's is committed to providing the best baked and highest quality food in a friendly family atmosphere. Almost 30 years ago, Harry and Charlotte Schmidt began making the finest German delicacies from scratch, using only the very best ingredients. Schmidt's extensive fresh food selection, impeccable wedding cake creations, fresh breads and pastries are since considered unmatched in Colorado.
Schmidt's Bakery began in a modest farmhouse on a country road in Berthoud, Colorado in 1982. Looking for a way to recover from a difficult economy, Harry and Charlotte Schmidt began by baking and wholesaling their original family recipe, the Beiroch, handed down from Grandma Lydia Schmidt. Word of the hearty flavor of the Beiroch, known to some as a krautburger, spread quickly. The combination of ground beef, cabbage, onions, and spices baked inside a golden brown bun gained a following, and prompted the Schmidts’ to develop more sandwiches for those who wanted a wholesome, tasty alternative to fried fast food.
The business quickly outgrew the 400 square foot farmhouse, and Schmidt’s moved to West 1st Street in Loveland, Colorado, where Harry and Charlotte opened their first retail space. What began as an afterthought - a few tables and a small pastry case - grew to dominate the business, as more and more people discovered what was at that time Loveland's best kept secret. After a while, though, the secret got out, and customers flocked to Schmidt's for the best pastries, doughnuts, cakes, pies, and deli sandwiches in Loveland. Soon, the wholesale business was overshadowed by retail sales, and it became clear that once again Schmidt's needed more space!
Harry found the perfect location, high on a hill in southwest Loveland in an A-frame building which once housed a bowling alley. It offered plenty of room for Harry to build the bakery he had always wanted, as well as plenty of space for tables to serve sit down meals. From the Bavarian architecture outside, to the comfortable and charming dining room, to the spacious retail area, Schmidt's Bakery is a wonderland of authentic German quality, dazzling delicacies, and culinary delight.
Recently, Schmidt’s Bakery came on hard times and Harry decided it was finally time to pass the torch to enjoy some much deserved retirement. Harry looked to longtime friends and customers, Tracy and Deb Hilker, to continue the family tradition of ownership knowing full-well they were the right people to rebuild Schmidt’s into the iconic legacy of Northern Colorado that it once was. Tracy and Deb had been longtime restaurant, bakery, and grocery store owners in Estes Park and Niwot, lived and raised their 4 kids and 2 adopted kids in Loveland, as well as were wholesale and retail customers of Schmidt’s for more than 10 years. In 2011, they agreed to take over Schmidt’s Bakery via their ownership team of family members and professionals with two goals in mind: 1. Return Schmidt’s quality and customer service to the legacy of Northern Colorado it once was with the expectation that all products will be right the first time and right every time. 2. Build Schmidt’s into a prominent part of the Northern Colorado community with dedication to giving back to the community that has given them so much.
Today, Schmidt's remains a family owned and operated business that makes everything from scratch, from a simple chocolate chip cookie to our renowned wedding cakes.
We offer a wide variety of freshly baked delicacies - German specialties including the Bieroch (also known as a "krautburger"), artisan crafted breads, cakes, cupcakes, and pies. Our full service deli includes a variety of bratwurst, imported cheeses, European style luncheon meats, and fresh made salads. Our pastry case is overflowing with everything from small finger-size treats to multi-layer decadent tortes. Baking is done daily at our main location in Loveland, Colorado using only the highest quality ingredients and authentic family recipes.
We have hired back some of Harry’s original bakery team of which he hand-selected and trained his signature recipes and baking style to. This team is some of the original bakers from Schmidt’s and are dedicated to making sure every item that leaves our store has the gold standard of flavor and quality that they learned from Harry long ago.
We have re-opened our restaurant to offer breakfast and lunch, including holiday specials on Valentine's Day, Easter, Mother's Day, Father's Day, Oktoberfest, Veterans Day, Thanksgiving, New Years, and Christmas. Also, we will soon be re-opening for dinner. Our menus include some of the traditional German cuisine that made Schmidt’s famous, as well as new farm fresh American and European dishes designed by Chef Dale Lamb. Our menu is designed to provide a variety that the whole family will enjoy while utilizing some of the freshest farm meats and produce grown locally. Also, our restaurant provides those items you could only find at Schmidt’s, such as a variety of fresh baked breads and desserts for your enjoyment.
In addition to our fresh-baked goods, pastries and pre-made cakes we will personalize for you, we also create seasonal treats, exquisite wedding cakes and custom cakes for all occasions. We have partnered with Estes Park sensation Sweet Peaks Cupcakery to provide customers some of the most exquisite varieties of cupcakes in Colorado.
Schmidt's Bakery items are available in locations across Northern Colorado, including our flagship retail store in Loveland, the Niwot Market in the Niwot Shopping Plaza, and The Country Supermarket in Estes Park. Finally, having a seasoned pro such as Chef Dale Lamb has allowed us to create a very special line of catered foods and trays for your wedding or event. We have a large catering menu already established, or you can work with Chef Lamb directly to create a custom menu just for you! No event is too big or small.
